About Microgreens

They are tender little greens that are about one to two inches long. Microgreens are typically only seen in fine dining restaurants, used as delicately placed garnishes or for a pop of unique flavor. But microgreens are more than a garnish. They are packed with nutrition. Now more than ever we all need to eat healthy to help keep our immune system at its best. Some health experts suggest that we should consume 9-10 cups of vegetables daily, especially green leafy vegetables. That is hard to do.

While looking for the ultimate in healthy superfoods, we came across research from  the University of Maryland and the United States Department of Agriculture (USDA) They recently completed a study to determine the level of nutrients in microgreens compared to their mature counterparts. Their research ultimately discovered that the microgreens contained 4 to 40 times more nutrition than the adult plant. Wow! That is impressive!

Including these nutrient dense superfoods to your daily dishes is a great way to build your immunity and health while adding unbelievable flavor to your favorite recipes.

SPICY SALAD MICROGREEN SANDWICH

VARIETIES

Microgreens are tiny, immature versions of vegetables, herbs and other plants harvested a week to two weeks after germination. They are extremely flavorful, super nutritious, and soooo convenient to eat - you literally just throw them on all your meals (sandwiches, soups, salads, eggs, in smoothies, etc).

BROCCOLI

Broccoli microgreens have high sulforaphane content, are dark green and have mild broccoli flavor.
are young broccoli plants that are rich in glucoraphanin, a precursor of sulforaphane. Preclinical studies suggest that sulforaphane, an isothiocyanate, has anticancer effects against prostate, breast, and urinary cancers. 1 ounce of broccoli greens has the same level of sulforaphane as 1.5 pounds of mature broccoli. Less is more!
Broccoli microgreen has a milder broccoli-taste, or bitterness, some say. The slightly bitter taste is due to the presence of a compound called sulforaphane. This compound is actually good for your health.
